Apulia lies on the “heel” of an Italian boot and is surrounded on three sides by the sea and most of the area is covered by extensive olive groves. I spend several months a year there, getting to know the region mainly from the perspective of a bicycle. About 40% of Italian olive oil is produced here, and some of the trees are several hundred years old.
